« Fait maison » : une grille d’interprétation à connaître

Pour aider les restaurateurs à mieux comprendre la réglementation du « fait maison », la Direction générale des entreprises a publié une grille d’interprétation.

Concrètement, cette grille reprend dans un tableau chaque article de la Loi relatif au « fait maison » et en propose une interprétation la plus simple et explicite possible.

Voici un exemple tiré de cette grille :

La Loi indique qu’un « un plat fait maison est élaboré sur place à partir de produits bruts ».

Sur le tableau, il est précisé que « pour demeurer « brut », le produit alimentaire doit être acheté cru par le restaurateur, il ne doit pas avoir été modifié dans sa nature et en particulier par un mélange avec un autre produit alimentaire ou par un chauffage préalable ».
